This is my official ramp appreciation post! I love ramps they have a sweet flavor with hints of garlic, onions, and a little bit of spice. You can use every part of the ramps. I paired mine with scallops. I started out by doing a quick pickle with some ramps and fiddlehead ferns. To me fiddleheads don’t have a ton of flavor (but they look cool) so I really wanted to take advantage of the ramp brine and infuse some of that flavor into the fiddleheads. A few of the ramp leaves had started to wilt
